Cantina Zuanon is the realization of an important goal, the result of over thirty years of experience in the world of cured hams, and is the personal achievement of the “master ham maker” Leone Zuanon who, driven by passion and a desire for refinement, is now able to satisfy the Specialists of Delicatessen.
His craft involves choosing hams, meticulously selecting them from the aging processes of the best producers in San Daniele, to achieve the utmost excellence.
Only then are they brought to his cellar for aging, which lasts from six to eight months. Here, they are personally cared for by Leone, who daily checks temperature and humidity, especially valuing the climatic aspects that nature and the seasons offer, continuously airing his cellar where gentle breezes allow them to mature slowly, without haste.
The resulting product is balanced, the weight is the guarantee of a leg from a mature pig; at the “puncture” the aroma is sweet and even the aesthetics are finely curated to present a unique and high-quality ham.
The aging process at Cantina Zuanon represents a true added value, creating an exciting journey aimed at strengthening the authentic identity of the flavor and ancient tradition of artisanal ham, now appreciated by an increasingly broad market segment, far from the mass industrial conformity.
The Raw Material of San Daniele Ham
Only legs from pigs raised in 10 regions of Central-Northern Italy can be used for the preparation of San Daniele Ham.
The pigs used must belong to genotypes meeting the requirements set by the “National Genealogical Book for the Italian heavy pig.” In particular, they must develop a weight of no less than 160kg. at the time of slaughter, which must occur after nine months from birth.
The pigs are raised in compliance with the essential welfare requirements dictated by modern awareness and fed with a strict diet of approved foods.
